Fellow foodie,
I’m Elizabeth Estrada, Engagement Editor at WHYY’s PlanPhilly. When I’m not busy interviewing Philadelphians for a story or editing op-eds, I’m usually in my kitchen, experimenting with a new savory dish or trying to become a better baker. I grew up cooking with my mom and now as an adult, I find it’s a fun way for me to be creative and destress after a long day. But even more importantly, it’s also how I remain connected to my Cuban heritage and share it with those I love.
Food has that special power — to connect people across cultures and communities — through flavors, ingredients and the history of a dish. It has the ability to transport you to a new place you’ve never been or take you back in time. When it comes to food this time of year, I usually crave comfort and vegetarian versions of meals that I grew up eating. That’s why I am obsessed with the vegetarian burrito from Los Cuatro Soles in South Philly. It has the rice and beans of my childhood but with a Mexican twist that allows me to experience the Puebla roots of the family who makes it.
